Ingredients:
- One whole Chicken
- 2 tsp ginger garlic paste
- 1 tsp red chilli powder
- ½ tsp turmeric powder
- 3-4 tbsp oil
- Green chillies slit and roundels for garnishing
- Salt As per taste
- Coriander leaves for garnishing
For making Gravy :
- 3-4 medium sized onions finely sliced, fried and grind into paste.
- 1.5 cup grated coconut and cashews 15 in nos, dry roast and grind into fine paste.
Freshly made garam masala: Dry Roast the following and grind into fine powder
- Dried red chillies 3 in nos
- 10 cloves
- 15 black pepper
- 2 cinnamon sticks
- 5 green cardamom
- 2 black cardamom
- 2 star anise
- 2 tsp whole coriander
Preparation:
- Marinate chicken with ginger garlic paste, salt, red chilli powder and turmeric and keep it for 2-3 hours.
- In a thick bottomed pan take oil and put marinated chicken and sauté on high heat for 5 minutes.
- Now add coconut and cashew paste and cook for 5-7 minutes on medium flame.
- Now add fried onions paste and cook for 5 minutes.
- Add freshly made garam masala and red chili powder and let it cook for 5-7minutes on high heat.
- Add warm water to it.
- Continue adding warm water till the desired consistency of gravy is achieved.
- Cook till chicken is tender and gravy leaves the oil.
- Garnish with green chillies (both slit and roundels) & coriander leaves.
- Serve hot with appams, set dosas, rice, parottas, rotis.
