Chicken Varutharachathu
  1. One whole Chicken
  2. 2 tsp ginger garlic paste
  3. 1 tsp red chilli powder
  4. ½ tsp turmeric powder
  5. 3-4 tbsp oil
  6. Green chillies slit and roundels for garnishing
  7. Salt As per taste
  8. Coriander leaves for garnishing

For making Gravy :

  1. 3-4 medium sized onions finely sliced, fried and grind into paste.
  2. 1.5 cup grated coconut and cashews 15 in nos, dry roast and grind into fine paste.


Freshly made garam masala:  Dry Roast the following and grind into fine powder

  1. Dried red chillies 3 in nos
  2. 10 cloves
  3. 15 black pepper
  4. 2 cinnamon sticks
  5. 5 green cardamom
  6. 2 black cardamom
  7. 2 star anise
  8. 2 tsp whole coriander


  1. Marinate chicken with ginger garlic paste, salt, red chilli powder and turmeric and keep it for 2-3 hours.
  2. In a thick bottomed pan take oil and put marinated chicken and sauté on high heat for 5 minutes.
  3. Now add coconut and cashew paste and cook for 5-7 minutes on medium flame.
  4. Now add fried onions paste and cook for 5 minutes.
  5. Add freshly made garam masala and red chili powder and let it cook for 5-7minutes on high heat.
  6. Add warm water to it.
  7. Continue adding warm water till the desired consistency of gravy is achieved.
  8. Cook till chicken is tender and gravy leaves the oil.
  9. Garnish with green chillies (both slit and roundels) & coriander leaves.
  10. Serve hot with appams, set dosas, rice, parottas, rotis.
