300 gm Fish fillet (Indian Salmon/Basa/Sol )
2 tbsp roasted Rice flour (the normal one used for Idli/dosas is fine or else dry-roast any rice and grind it)
Crush these together - 5 garlic cloves, 3-4 coriander roots & stem, 3-4 green chillies
1 tbsp Refined Oil
2 tbsp Oyster sauce, 1 tbsp Thai or Light Soy sauce
1 cup chicken stock (Or 1/2 Maggie chicken stock cube in 1 cup water).
1/2 tbsp Palm sugar/Jaggery dissolved in water
1 cup cut veggies (Capsicum/mushroom/carrots/beans etc)
Kaffir lime leaves and Basil leaves.
1. Mix rice flour with a bit of salt/chilli powder/pepper and coat the fish from all sides. Let it remain for 10-15 mins and then roast on a nonstick with very little oil.
2. Heat rest of oil and put the crushed garlic mix and stir fry a bit, then add the veggies & Lime leaves and stir fry.
3. Mix Oyster sauce, Soy sauce, Palm sugar, chicken stock together and add to the mix.
4. Once the mix boils, add fish, cook for a minute, add the basil & spring onion to garnish.and take off heat immediately. Serve with steamed rice.
