Vanilla cupcakes

Vanilla cupcakes

For a dozen cupcakes :
3 eggs
2/3 cup soft butter or Refined oil 
3/4 cup ground sugar
1 1/2 cup Refined flour/Maida
1 tsp Baking powder
1 tsp Vanilla extract
Optional - Handful of walnuts/chocochips/blueberries etc, Icing to top the cupcakes




- Pre-heat oven to 175 C.

- Sieve flour and baking powder together.

- In a large bowl, mix butter and sugar with an electric mixer or by hand until light and fluffy, about 3-4 minutes. 

- Break the eggs, one at a time, blending well after each one. 

- Stir in the vanilla and flour and mix by hand well, add in the nuts/chocochips/berries if using.

- Spoon into cupcake cases and bake at 175 C till a toothpick comes clean (about 20-25 mins)

- Cool and top with icing if wish (Ive used a Pillsbury Vanilla icing).
