I met Gurgaon Foodie Nalin Jha first at last year’s Durga Puja pandal at DLF Phase 1 community centre. In an otherwise clichéd food available at the food stalls, he was a ray of sunshine, proudly selling his Bihari litti chokha, and an amazing mutton curry that was hitting the spot.  So when he messaged me a couple of days ago, saying that he has started an “only-mutton” home delivery service and requesting me for a review, I happily agreed. I must confess I run for cover when someone approaches me with a “butter chicken-dal makhni” kind of menu. But when someone approaches me promising a new food adventure, I am eager and willing !

So he sends me single helping samples of some of his dishes on a Sunday. I must say I enjoy the food. The mutton is beautifully cooked on the bone, each curry has a distinctly different food, and most of the curries are delicious. Here is a brief description of what I taste.

Mutton Nihari (Small - Rs 650 serves 2, medium - Rs 1200 serves 4, Large - Rs 2200 serves 8) challenges my basic beliefs about Nihari. Unlike the goat shank with thin, meaty gravy, this dish is haleem without the wheat component. When I ask Nalin, he says, “We have done a bit of research and found out how the nihari originally is made in Pakistan. Here the mutton completely disintegrates with spices, water and flour after being on very low stove top cooked overnight.”

Handi Gosht (Small - Rs 550 Serves 2, medium - Rs 1000 serves 4, Large - Rs 1900 serves 8) has mutton marinated with whole spices, and other ingredients overnight and then cooked in a sealed clay pot on very low heat till ready. This dish is cooked completely without water. It is nice but a bit too meaty for my taste. Litti Meat (Small - Rs 600 Serves 2, medium - Rs 1100 serves 4, Large - Rs 2000 serves 8) is served with Bhuna Meat, made in onion-tomato gravy. It is nice but not my favourite.

Keema Kaleji (Small - Rs 600 Serves 2, medium - Rs 1100 serves 4, Large - Rs 2000 serves 8) is delicious. This is the first time I am having keema kaleji where kaleji has not been overcooked. The unusual sounding Mutton Mahamaari (prices same as other dishes) is apparently a recipe which has been in Nalin’s family for generations with an green chillies and onion base made only with whole spices and ghee.  The dish is rather spicy and really enjoyable.

Laal Maas (prices same as keema kaleji) is different to the one I am used to but is sufficiently hot and spicy. It is an enjoyable dish.

Kachche Gosht ki Biryani (Small - Rs 650 Serves 2, medium - Rs 1200 serves 4, Large - Rs 2200 serves 8) has raw meat marinated overnight and covered with half cooked rice and then cooked on dum till done. The biryani is spicy and nice, but I prefer the understated elegance of Gul’s biryani.

Meat4U serves good mutton dishes. The quality of meat is good and it is cooked well, with each dish having a distinct home cooked taste. The prices are somewhat on the high side though.

Mutton Nihari : (A smooth flour based mutton stew with a myriad of spices cooked on a very low heat for minimum 12 hrs and garnished with fresh ginger strips and ghee tadka).

Litti Meat : The famous Bihari Littis dipped in desi ghee served with lip smacking Bhuna Meat.

Keema Kaleji : A rich curry dish prepared with minced mutton and mutton liver spiced with freshly roasted Garam Masala and rich tomato onion gravy.

Price – Rs. 600 for Small Plate – Serves 2 ,   Rs 1100 for Medium Plate – Serves 4, Rs. 2000  for Large Plate – Serves 8  (mildly spicy)

 

Bhuna Gosht : A traditional dhaba style curry in which mutton is pan fried in its own juices with rich tomato onion gravy deeply flavoured with fresh ground spices.

Price – Rs. 550 for Small Plate – Serves 2 ,   Rs 1000 for Medium Plate – Serves 4, Rs. 1900  for Large Plate – Serves 8 (mildly Spicy)

 

Laal Maas : The traditional Rajasthani recipe where mutton is cooked with only red chillies, spices and yogurt. It’s not for the faint gutted!

Price – Rs. 600 for Small Plate – Serves 2 ,   Rs 1100 for Medium Plate – Serves 4, Rs. 2000  for Large Plate – Serves 8  (Very Spicy)

 

Kachche Gosht ki Biryani : A spicy colourful variant of the legend of nizam’s kitchen where overnight raw marinated mutton is cooked with spices for a couple of minutes and covered with rice and kept on dum until done, served with raita.

Mutton Korma : A mughlai cuisine of modern day India – Pakistan where mutton is marinated with yogurt and spices overnight and cooked with saffron based onion gravy for its rich textured taste.

Price – Rs. 600 for Small Plate – Serves 2 ,   Rs 1100 for Medium Plate – Serves 4, Rs. 2000  for Large Plate – Serves 8 ( mildly spicy )

 

Mutton Mahamaari : A lost recipe of ancient Bihar revived through tales wherein Mutton is cooked with only green chillies and spices for the palate of chilli lovers. Extremely hot and flavourful preparation for the extra chilli cravers.
