Chicken Dum Biryani
Ingredients:

For marinating Chicken:- Marinate for 2-3 hours.

  1. Chicken with bones 1kg
  2. 1 cup curd
  3. 3 green chilies finely chopped
  4. 2 tsp red chilli powder
  5. 1 tsp turmeric powder
  6. 2 tsp freshly ground garam masala
  7. 15 almonds – peeled, dry roasted and grind into fine powder
  8. Salt to taste

Basmati Rice 2 cups soaked in water for 30-45 minutes and cook till 80% done.

For Preparing “Bhuna Chicken”

  1. 3 medium sized onions finely sliced
  2. Whole garam masalas
  3. 1 medium sized tomato
  4. 2 tsp ginger garlic paste
  5.  Adjust dry masalas as per taste
  6. Now bhuno chicken in onion tomato ginger garlic masalas till 80% done and keep aside.

Finely slice 3 onions and fry till dark brown and crispy and keep aside



Preparation:
  1. Grease earthen handi with ghee and make layers as given below
  • 1st layer of fried onions
  • 2nd layer of rice
  • 3 layer of “bhuna chicken” and sprinkle freshly ground garam masala and  2-3mint leaves
  • 4th layer of rice
  • 5th layer of “bhuna chicken” and sprinkle freshly ground garam masala and 2-3 mint leaves
  • 6th layer of rice
  • 7th layer of fried onions
  1. Keep biryani on dum for 15-20 minutes till chicken and rice are well cooked.
  2. Serve it with mixed veg or burrani raita, papad, chicken curry, onion lachhas and coriander chutney.
